Our Distillation

Our Distillation

After fermentation, the mezcal mash is ready to be distilled. We use traditional copper stills, which are prized for producing clean, flavorful spirits.

The process starts by placing the fermented agave mash into the bottom chamber of the still.

A fire is lit underneath, slowly heating the mash. As the temperature rises, alcohol and other volatile compounds turn into vapor.

These vapors travel up into a coil or condensing pipe, where they cool and turn back into liquid. This liquid is collected drop by drop.

The first distillation—called the "rough cut"—removes impurities. Then the liquid is distilled a second time to refine and concentrate the flavors. This second distillation is where the maestro mezcalero carefully selects the "heart" of the spirit—the best part for drinking.

In the case of our limited edition MZl- there is a fruit infused third distillation.
